Today was a busy day.

Sometimes it amazes me how time flies. Ugh! I hate it when before I know it, it’s dinner time. Feels like it just sneaks up on me. Then again, I get so wrapped up on getting things done around the house that I lose track of time.  If I didn’t plan for anything ahead of time I sometimes resort to food delivery. I mean, it’s convenient right? And unfortunately because my neighborhood is new and a little ways out. I have only one Chinese restaurant that delivers and papa johns. I’m not too happy about these options.

Well, enough rambling. Here’s what I made on todays busy day.

Veggie toast

Oven at 400 degrees

chopped broccoli

potatoes(chopped however you prefer but thin enough to cook as fast as the broccoli)

crookneck yellow squash sliced

minced garlic

shredded cheddar

freshly grated Parmesan

Freshly grated pepper

moringa seasoning

In a bowl add all ingredients and drizzle olive oil. Mix and coat. Then, on a baking sheet I put aluminum foil for easy clean up and spread all ingredients on top. Bake for 8-10 minutes or until browning.

I did not measure any of it. I used one medium potato, one large broccoli crown, lots of garlic and one medium squash.

Also, I added precooked grilled chicken. Made a wonderful addition.

I think next time I’ll add bacon.
